- 1 3/4 cup of all purpose
- 2/3 cup of sugar
- 1/3 cup of butter
- 1/2 cup of walnut crushed coarse
- 1 cup of medium ripe mashed bananas
- 2 large eggs
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- Preheat oven to 350 degrees F. Coat a loaf pan with cooking spray or butter.
- Sift together flour, baking powder, baking soda and salt.
- In a large mixing bowl, whip together eggs, sugar and butter
- Add the mixture flour gradually and walnut. Stir with spoon until consistency.
- Pour batter into prepared pan, bake for 50 minutes.
- Remove pan from oven, cool for 20 minutes before running a knife around outside edges.
- Remove the loaf from pan, and transfer to a wire rack to cool, add 30 minutes before slicing.
